Ingredients for Kiwi curd:
- 4 kiwis
- 2 tbsp water
- 1 lemon: zest and juice
- 3 egg yolks
- ¼ cup sugar
- 2 tbsp butter
- 1 tbsp cornstarch
How to make Kiwi curd:
First peel the kiwis and make it puree in a food processor with 2 tbsp of water. Then, add the Kiwis in a pan with egg yolks, sugar, cornstarch, lemon juice and zest. Stir continuously until thickened.

Remove from heat and add the butter.
Finally we temper and save the kiwi curd in a glass jar tightly covered in the refrigerator until ready to use.
