Black forest ice cream {with chocolate and cherries}

The black forest ice cream is, without a doubt, one of my favorites ice creams in the world. Vanilla and cream base, sweets and crunchy chocolate chips and delicious cherries. A pleasure that you will not want to share.

Making ice cream at home is a vice. Not only because it is easy, also because it allows you to try different combinations of flavors without preservatives and excesses of fats and sugar. In addition we can make it with or without ice cream maker (below I explain how), obtaining a very creamy result.

This time I took advantage that we are in the season of cherries. But let fly your inspiration and try other flavors.

Ingredients for Black forest ice cream with cherries and chocolate:

  • 400 ml of cream
  • 400 ml of milk
  • 3 tbsp of inverted sugar syrup
  • 4 egg yolks
  • 100 g of sugar
  • 1 tsp vanilla paste
  • 200 g halved and pitted cherries
  • 1 cup of chocolate chips

How to make Black forest ice cream with cherries and chocolate:

Mix the milk, the cream, the vanilla and the inverted sugar syrup in a saucepan over medium heat.

When the milk is hot, set the heat to medium low and add the beaten egg yolks. Stir about 3-4 minutes until it has thickened slightly (now we have a light custard).

Turn off the heat and let cool at room temperature. Put the mixure in a glass container with lid and leave in the refrigerator for about 6 hours or until the mixture is very cold.

After this time we will have the mixture ready to make the ice cream with or without a ice cream machine:

  • Without an ice cream machine: add the chocolate chips and cherries to the ice cream base. Mix well and take to the freezer 30 minutes. After this time, beat the ice cream with an electric mixer. Let to the freezer and repeat this step every 30 minutes, at least 5-6 times.
  • With an ice cream machine: put the base of the ice cream in the machine and, when it begins to freeze, add the chocolate chips and cherries. Leave a few more minutes until the ice cream is ready. Let the ice cream to the freezer at least 6 hours before serve it.

We will take it out of the freezer about 10 minutes before serve and eat it.
