Marble or zebra bundt cake

What I like most about this marble cake or zebra cake is that it is very juicy inside and with a lot of chocolate. This bundt is perfect to surprise everyone with its beautiful inside.

Doing the he marble or zebra effect is very easy, although it requires a little more time. We are going to make two different mixures: one with chocolate flavour and another with vanilla flavour. We just have to have some patience and alternate small portions of this mixures.

Ingredients for the marble cake or zebra cake:

For the sponge cake:

  • 5 eggs
  • 360 g (3 cups) cake flour
  • 1 teaspoons baking powder
  • ½ teaspoon salt
  • Granulated sugar 100 g (½ cup) + 250 g (1 ¼ cup)
  • 40 g (½ cup) cocoa powder
  • 108 g (½ cup) milk
  • 1 ½ teaspoons vanilla paste
  • 75 g (6 tablespoons) water
  • 177 g (1 cup) unsalted butter, melted and cooled

We will also need:

  • Melted butter to spread the bundt pan

For the chocolate glaze:

  • 170 g chocolate
  • 120 g (⅔ cup) heavy cream

How to make marble cake or zebra cake:

Preheat the oven at 350 ºF (175 ºC).

In a large bowl, add the flour, salt and baking powder; set aside.

In a smaller bowl, add 100 g (½ cup) of sugar, the cocoa powder and water at room temperature. Mix well until mixture is smooth; set aside.

On the blender, mix the melted butter and 250 g (1 ¼ cup) of sugar, about 1 minute.

Then, add the eggs one at time, mixing well after each addition. We also add the vanilla in pasta. Beat mixture a couple of minuts, until it becomes light and fluffy.

Turn mixer speed down to low and add the flour in three additions, alternating with the milk in two additions and mixing just until blended.

Add 3 cups of the batter to the cocoa mixture and stir until blended.

It is important to grease well the pan with melted butter before pouring the mixure. For this we will paint it with a pastry brush.

The so cool effect of this cake gets when we pour the mixure into the pan. The process will require some time, however it is very easy. For this we are going to put a generous spoonful of vanilla mixure in the pan; on this we will put a spoonful of chocolate, which we will cover again with a vanilla. Repeat with all the mixure.

Bake zebra bundt cake for 50-60 minutes at 350 ºF or until a cake tester inserted into the center comes out clean. Take it out of the oven and let it cool for 15 minutes on a rack before unmolding.

After this time we turn it over to unmold it and let it cool completely.

Finally we are going to prepare chocolate coverage. We will do it by mixing the chocolate and the heavy cream. Heat them into the microwave for 20 seconds and stir until the chocolate has melted completely. If the time is not enough, repeat, although in short heat intervals so that it does not burn.

The final touch is given by pouring the chocolate on the cake.
