


Ingredients for 8 vanilla cupcakes with vanilla buttercream:
For vanilla cupcakes:
- 50 gr oil
- 100 gr sugar
- 1 + ½ eggs
- 90 gr flour
- 1 teaspoon baking powder
- 50 gr milk
- ½ teaspoon vanilla paste
For a yolks buttercream:
- 2 yolks
- 27 gr water
- 87 gr sugar
- 125 gr unsalted butter
- ½ teaspoon vanilla paste
- A few drops of blue food coloring
We also need:
- 8 white cupcakes lines
- Sugar starts
- Edible glitter
How to make Vanilla cupcakes with vanilla buttercream:
Preheat the oven to 170 °C.
Mix the sugar with the oil and add the eggs one by one, mix well. Add the sifted flour with baking powder and mix at low speed. Finally add the milk and vanilla paste and mix until a homogeneous batter.
Scoop batter into cupcake liners, no more than a scant ⅔ full. A trick is fill the lines with a large serving spoon scoops of ice cream (1 tablespoon = amount for one cupcake).
Bake about 20 minutes or until lightly browned.
Remove the cupcakes from the oven and place them on a rack to cool completely.
To make the yolks buttercream, put the yolks in the mixer bowl and beat at medium-high speed. Meanwhile, put the sugar and water in a saucepan over medium heat until it reaches 120 °C. At that moment, whisking, add slowly the melted sugar on the yolks and beat until the mixture is at room temperature.
Then, add the butter cut into cubes and beat 5 minutes until have a smooth and silky cream. Add vanilla, a few drops of blue food coloring and mix well.
Let cool the cupcakes and place the buttercream in a pastry bag and decorate. Finally sprinkle some edible glitter and sugar starts.
