If you like spices, you need taste these wonderful spice and chocolate muffins, light and fluffy. With an intense spiced taste, that it combines perfectly with the sweetness of chocolate.
I can’t count how many times I have cooked these muffins, but it’s have a peculiar and aromatic taste thats impossible don’t fall in love with the fist bite. There also have a texture that makes it unmistakable with all the others.
On this occasion I have chosen to aromatize them with cinnamon, orange, vanilla, clove and anise. But you can try different combinations to find your favorite.
Ingredients for 12 spice and chocolate muffins:
- 230 ml hot water
- 120g white sugar
- 65g brown sugar
- 50g unsalted butter
- 50g sunflower oil
- 1 egg
- 318g flour
- 1 ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ¾ teaspoon of salt
- 225 ml whole milk
- 1 cinnamon stick
- ½ Orange skin
- ½ vanilla bean
- 1 clove
- 1 star anise
- 100g chocolate
How to make spice and chocolate muffins:
In a saucepan over medium heat add water, cinnamon, half-orange peel, vanilla bean, clove and star anise. When it starts to boil, remove from the heat and cover the saucepan. Let stand 5 minutes, remove the spices from the water and let cool at room temperature.
Meanwhile, grate the chocolate and place one muffin liner in each hole of the tray to bake them. Start the oven to 180 °C so preheat it.
Then, mix the flavored water with white and brown sugar, salt, oil, egg and melted butter. Whisk and add half the flour mixed with baking soda and baking powder; whisk well and add the milk and the flour. Finally whisk again and add the grated chocolate.
With this recipe you get a liquid batter, don’t worry, it is absolutely NORMAL, it makes the muffin very light.
Fill the muffin liners ¾ of its capacity and bake it for 15-17 minutes, until ready.
