If you want a crispy and tasty but delicate cookie to surprise your guests, you need this spearmint and lemon cookies recipe. It’s amazing!
Ingredients for Spearmint and lemon cookies:
- 250 gr flour
- ¼ teaspoon salt
- 100 gr sugar
- 200 gr unsalted butter
- 2 sprigs of spearmint
- Lemon curd
How to make Spearmint and lemon cookies:
First, mix the flour, the salt and sugar with butter until smooth dough. Chop the spearmint leaves and add to the dough.
Make a ball with the dough and put it in the fridge at least 1 hour to take consistency.
Then, place the ball of dough between two sheets of baking paper and stretched very thin with a rolling pin. Introduce the stretched dough in the fridge to harden and then cut it with a cookie cutter. If the temperature is hot you have to refrigerate the dough every few cut cookies. I recommend you cutting the dough into the same tray where you going to bake it, to handle it as little as possible.
Refrigerate about 30 minutes to not deform to bake cookies.
Preheat the oven to 175 °C and bake the cookies about 10 minutes or until it goldens. After this time, leave the cookies to cool in the tray, because while the cookies are hot it will be very soft.
Finally, once the cookies has cooled, place a teaspoon of lemon curd on a biscuit and cover with another. Conserve it in the fridge.
