The weekend is here, and this very easy appetizer recipe is perfect for it: delicious potato croquette, chorizo and quail egg.
What I like most about this recipe is that it’s delicious thanks to the combination of flavors and textures. In addition, on this occasion, I cooked it using a leftover potato puree, a few chorizos and some quail eggs that I had on my fridge.
Now you have a perfect weekend plan: sofa, a movie, the best possible company and lots of this delicious and irresistible snacks.

Ingredients for potato, chorizo and quail egg appetizer (serves 6):
- 6 potato croquettes
- 1 chorizo
- 6 quail eggs
- Salt
- Frying oil
How to make potato, chorizo and quail egg appetizer:
First, make the potato puree balls; you can do it following the recipe that you will find clicking here. Fry them and let them drain on kitchen paper (to absorb excess oil).
Meanwhile, cut the chorizo in slices of about 1 cm and cook in a very hot pan without any oil, until they are crisp.
Finally, fry the quail eggs with a pinch of salt.
Assembly:
It’s as simple as spike the potato croquettes and a slice of chorizo on a skewer, finally the egg, but be very careful not to prick it with the yolk.
Serve immediately, before it gets cold.
