Ingredients for Peanut butter and Lacasitos cookie bars:
- ½ cup (95 g) unsalted butter
- 1 large egg
- 1 cup (160 g) brown sugar
- 1 tablespoon vanilla extract
- ½ cup (65 g) creamy peanut butter
- 1 cup (120 g) all-purpose flour
- 160 g Lacasitos or m&ms
How to make Peanut butter and Lacasitos cookie bars:
First, preheat the oven to 350F and line a 8-by-8-inch baking pan with parchment paper.
Then, in a large bowl, add the melt butter, egg, brown sugar, vanilla, and whisk until smooth. Add the peanut butter and whisk until smooth.
Now, add the flour and stir until just combined, don’t overmix. Add the lacasitos or m&ms, saving a couple of them to decorate at the end.
Turn batter out into the pan, smoothing the top lightly with a spatula. Place a few lacasitos or m&ms on the top of the batter.
Bake for about 25 minutes, or until a toothpick inserted in the center should come out clean.
Let cool for at least 30 minutes before slicing and serving.
Bars will keep airtight at room temperature for up to 1 week.
