Ingredients for Healthy papaya bars:
Crust:
- ¾ cup (85 gr) all-purpose flour
- ¼ teaspoon salt
- 1’5 tablespoons agave syrup
- ¼ cup (50 gr) diced very cold unsalted butter
Filling:
- 4 tablespoons agave syrup
- 1’5 tablespoons all-purpose flour
- ¼ teaspoon salt
- ¼ cup red papaya puree (mashed pulp)
- 2 large eggs
- 2 teaspoons lemon juice
Topping, optional:
- Powdered sugar
How to make Healthy papaya bars:
Preheat the oven to 200 °C and cover the baking dish with parchment paper.
Then, add the dough ingredients in the food processor (flour, salt, agave syrup and butter) and grind until smooth dough. Now, put it on the baking dish and press with your fingers.
To make the filling, in a bowl, whisk the agave syrup, flour, salt, mashed papaya, eggs and lemon juice until smooth.
Pour the filling over the crust and bake it 20-25 minutes. You’ll know the papaya bars are done when the filling appears set. Cool in the pan on a cooling rack until it reaches room temperature.
Finally, cut it and sprinkle with icing sugar.
