Good Morning! penultimate weekend of August and I’m here with another recipe perfect for summer! What do you think about another recipe with papaya? I’m trully believe that if something engages very well with papaya it is the coconut, so now we are going to cook a delicious and healthy papaya and coconut popsicles. ¿Looks good, right?
Ingredients for Papaya and coconut popsicles:
For papaya layers:
- 300 gr papaya puree*
- ½ lemon juice
- 2 tablespoon honey
*To make the papaya puree, grind 300 g peeled and seedless papaya.
For coconut layers:
- 300 gr coconut yoghurt
- 1 tablespoon shredded coconut
How to make Papaya and coconut popsicles:
To make the papaya layer, mix the mashed papaya, the lemon juice and the honey.
To make the coconut layer, mix the coconut yoghurt and the shredded coconut.
Now, we will assemble the popsicles: alterne 1’5 tablespoons of each flavor: first 1’5 tablespoons of coconut, then 1’5 of papaya, another 1’5 of coconut,… filling the molds to the top. Inserte the stick.
We only need put them in the freezer for 6 hours. At serving time, to remove better the popsicles, we only need dip the molds a few seconds in hot water.
