These irresistible muffins with olive oil and lemon will amaze you, not only for its aroma, but also for its fluffy and soft inner. I’m sure them will be your perfect ally to start the day with energy. Best of all, you’ll have them ready in just 20 minutes!!
Ingredients for 10-12 olive oil and lemon muffins:
2 eggs120 g sugarSugar to sprinkle muffins80 ml heavy cream115 ml virgin olive oil2 lemons zest160 g flour2 teaspoons of baking powder
How to make olive oil and lemon muffins:
Preheat the oven at 180 ºC.
In a bowl, mix the eggs with the sugar and whisk until the mixture doubles its volume. Add the heavy cream and olive oil in a thin trickle while continuing to whisk. When well integrated, add the lemon zest.
Next, sift the flour and yeast, add them to the previous mixture and mix them with a silicone spatula.
Scoop batter into cupcake liners, no more than a 3/4 full. Sprinkle sugar on the cupcake and bake them for about 12-14 minutes or until lightly browned.
Let cool and store them in an airtight container until the moment of eat them.
