Homemade fresh pasta

Ingredients: 90-100 gr flour, a pinch of salt and 1 egg.    How to do it: First, place the flour on a board, add a pinch of salt, make a well in the center and crack the egg into it (the amount of flour is a bit indicative, as it will range between 90 and 100 gr per egg). Then, mix until everything is combined and you have a smooth lump of dough (if the dough is inconsistent add a little more flour, whereas if it is very dry you can add a few drops of olive oil).  In this moment, wrap it in cling film and put it in the fridge to rest for at least half an hour before you use it. Now we have two options: stretch with a roller or in a pasta machine. Finally cook them in plenty of boiling water for 3-5 minutes.
