I love the crispy breaded, however, and following my purpose to eat healthier and reduce the unnecessary fats, I found the perfect baked «fried chicken» recipe. The result is a juicy, tasty and the most crispy chicken! You’ll be surprised how yummy is it without adding oil.
Besides, for this recipe I didn’t use egg and I replaced it by a mixture of yogurt, honey and Dijon mustard, to have a juicier chicken and providing an extra touch of flavor. Ingredients for Honey and mustard crispy chicken {baked without egg}:
For the crispy chicken:
- 2 chicken breasts
- 1 cup unsweetened homemade yogurt
- 2 tablespoons honey
- 2 ½ cups corn flakes
- Salt
- Freshly ground pepper to taste
For the honey & mustard sauce:
- 3 tablespoons mayonnaise
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
How to make Honey and mustard crispy «fried» chicken:
First, cut the chicken breasts into strips and season to taste.
In a medium bowl mix the yogurt, honey and mustard and introduce the chicken strips. Cover with plastic wrap and let marinate in the fridge for 30 minutes to a 2 of hours, for add the flavours at the chicken.
After this time, preheat the oven to 180 °C and crush the corn flakes. Dip the marinated chicken in the corn flakes, covering the entire chicken strip. In tis case, the yogurt, honey and mustard mixture replaces the egg.
Put the breaded chicken strips on a baking tray covered with greaseproof paper and bake it about 20 minutes or until browned on the outside and juicy inside. Remember that cooking time depends of the oven and how big are the chicken strips.
To prepare the sauce just we have to mix the mayonnaise, mustard and honey. Serve both together and enjoy the healthier «fried chicken»!!
