Ingredients for 12 corn bread three peppers muffins:
- 200 g of green, yellow and red pepper
- 50 g flour
- 75 g cornmeal
- 150 g grated cheese
- 1 ½ teaspoon of baking powder
- ¼ teaspoon of baking soda
- 1 egg
- 30 ml olive oil
- 150 ml milk
- Salt and pepper to taste
How to make corn bread three peppers muffins:
First, preheat the oven to 180 ºC and cut the peppers.
In a bowl, mix the dry ingredients: flour, cornmeal, baking powder, baking soda, salt and a pinch of freshly ground pepper.
Add the beaten egg, milk and olive oil and mix well. Finally, add the grated cheese and the chopped peppers, mix.
Then, scoop batter into baking cups.
Finally, bake it about 35 minutes. Remove the muffins from the tray and let cold on a grid.
