Happy Valentine’s day! Today I come with a perfect recipe to share, although I’m sure that when you taste this delicious panna cotta with coconut milk and strawberries, you’ll want it all for yourself!
The result is a very creamy and flavored panna cotta, much healthier than the traditional recipe, and with a slight touch of coconut. Coconut milk provides us with healthy fats and facilitates digestion against whole milk. It also combine perfectly with the natural strawberry jelly.

Ingredients for Coconut milk and strawberries panna cotta (serves 8):
- 500 ml coconut milk
- 500 ml heavy cream
- 500 g strawberries
- 6 + 2 tablespoons coconut sugar
- 1 vanilla pod
- 9 sheets of gelatin
- 3-4 tablespoons water
How to make Coconut milk and strawberries panna cotta:
First, put 6.5 gelatine leaves in a bowl of cold water for 5 minutes.
During this time, in a pan, mix the coconut milk, 6 tablespoons of sugar, the heavy cream and the vanilla bean open over medium heat. Stir to melt the sugar and remove from heat (don’t bring to boil). Take out the vanilla bean and add the drained gelatine leaves; whisk the coconut milk/gelatin mixture until the gelatin has completely dissolved.
Let the mixture temper and fill the cups with them. Put the cups in the refrigerator for a couple of hours until curdled.
After this time, put the rest of gelatine leaves in a bowl of cold water for 5 minutes. Meanwhile, cut the strawberries into pieces and grind with 2 tablespoons of coconut sugar, until have a pureé.
Heat 3-4 tablespoons of water and melt the drained gelatin leaves in it. Mix well with the strawberry puree and spread on the panacotas already curdled. Put it back in the fridge until the next day.
And we will have ready our panacottas with coconut milk and strawberry jelly ready to enjoy them.
