Light, healthy, vegetarian and refreshing dessert is possible with this Coconut milk and grapefruit jelly. Furthermore, it is very easy and quick to make!
However, not everyone likes grapefruit, so to the top layer you can use another fruit. Also, if you want a recipe 100% healthy and low calorie you can do it without the ladyfingers.
Ingredients for Coconut milk and grapefruit jelly (Serves 4):
- 500 ml coconut milk
- 1 large grapefruit
- 3 tablespoons coconut sugar
- 1 vanilla pod
- 6 sheets of gelatin
- 1 teaspoon brown sugar
- 4 ladyfingers
How to make Coconut milk and grapefruit jelly:
First, put the gelatine leaves in a bowl of cold water for 5 minutes. During this time, in a pan, mix the coconut milk, sugar and vanilla bean open over medium heat. Stir to melt the sugar and remove from heat (do not bring to boil). We take out the vanilla bean and add the drained gelatine leaves; whisk the coconut milk/gelatin mixture until the gelatin has completely dissolved.
Chop the ladyfingers and handed out among the cups, add 2 tablespoons of coconut jelly in each cup and freeze 10 minutes (in this way the biscuits don’t float and stay in the background). After this time just fill the glasses with gelatin and refrigerate until the gelee has set.
After this time, put the rest of gelatine leaves in a bowl of cold water for 5 minutes. Meanwhile, cut 4 slices of grapefruit and place 1 in each cup. Squeeze the rest of grapefruit and place it in a saucepan over medium heat. Add 1 teaspoon of brown sugar and remove from heat. Drain the gelatin and mix well with grapefruit juice. Pour the grapefruit gelee into each of the coconut jelly glasses, so that it almost completely, but not quite covers the grapefruit slices.
Finally we curdle in the fridge and we have a light, healthy and refreshing dessert.
