This is, like the majorca’s coca de trampó, a typical summer recipe here. If a Mallorcan invites you to eat at his home, I’m sure that you will find on the table a good piece of majorcan’s coca.
Making this swiss chard and sardines majorca’s coca is very easy and fast. The dough not need yeast, so we will have it ready in a few minutes. Then we place the vegetables and fish above and bake it, it has no complications.
What I like most about this coca with chard and sardines is that we can eat it hot or cold, so we can enjoy it in summer but also in winter.
Ingredients for swiss chard and sardines majorca’s coca:
- A good bunch of swiss chard
- 2 cans of sardines in tomato sauce
- 2 large tomatoes
- Majorca’s coca dough
- Salt, pepper and olive oil
How to make a swiss chard and sardines majorca’s coca:
First make the dough for coca (click here to see the recipe). Spread a litlle olive oil to the oven tray and stretch the dough on the tray with the help of your fingers.
Then, rinse the chard, drain and chop. Add salt and pepper to taste and a splash of olive olil. Mix well and distribute on the dough.
Now, rinse the tomatoes and cut them into slices, add a pinch of salt and distribute on the swiss chard.
Remove the thorns from the sardines and place them on the coca.
Bake at 360 ºF (180 °C) for 45 minutes or until the dough are crunchy and golden. The baking time is indicative, it will change depending on the thickness of the dough and the amount of vegetables or the humidity of the same.
Remove from the oven and we already have our swiss chard and sardines majorca’s coca.
