Trying to get your child to eat vegetables? These cauliflower and potatoes patties will be your best allies to hide vegetables. Kids can also help you with the cooking, food will taste better!
There are very easy and quick to cook, and perfect to take the tupperware to the office or school. These veggie burgers show us once again that eating healthy and varied is possible if you know how.
Ingredients for cauliflower and potato patties (serves 4):
- 1 small cauliflower
- 4 medium potatoes
- 2 cloves of garlic
- 75 ml milk
- ½ teaspoon chopped fresh thyme
- ½ teaspoon chopped fresh oregano
- 4 tablespoons flour
- ¼ teaspoon nutmeg
- Salt
- Pepper freshly ground
How to make cauliflower and potato patties:
Cook the unpeeled potatoes in plenty of water with a pinch of salt. Meanwhile, cut the cauliflower into florets, wash and cook them in plenty of water or steamed with the peeled garlic cloves. Drain and let cool.
Then, peel the potatoes and crush it with the garlic using a fork until a lumpy texture. Chop the cauliflower and add to the mashed potatoes. Salt and pepper to taste and season with thyme, oregano and nutmeg, add the milk and mix well.
Finally shape the patties, roll them in flour and fry until brown on a little olive oil.
Serve immediately, in my case, with a salad.
Isn’t yummy?
