Majorca’s apricot sponge cake

I love this majorca’s apricot sponge cake, especially when my grandmother bakes it. There is no year when, once the apricot season begins, don’t make this sponge cake with the apricots. Imagine a very spongy and juicy cake, crowned with an apricot just at its optimum point of maturity, orange, fleshy and very tasty. I don’t know about you, but I’m drooling.

Once again, I’m following my trend of these summer months: to share a typical recipes from Majorca. All of them, trampó salad, flatbread of trampó, tumbet, chard and sardines flatbread, etc.,  are easy recipes that we cook very often in our house.

I don’t believe you if you tell me that you wouldn’t want to sit on a terrace, near the pool, with an iced coffee and a nice piece of apricots sponge cake. That will be if you arrive on time, of course… I’m already eating as I write.

Ingredients for a majorca’s apricot sponge cake:

  • 225 g pastry flour
  • 12 g baking powder
  • 120 g sugar
  • 3 eggs
  • 90 g vegetable oil
  • 180 g sweetened natural yogurth
  • 6 big apricots
  • Cinnamon
  • Powdered sugar

How to make a majorca’s apricot sponge cake:

Preheat the oven at 350 F (180 °C).

Beat the eggs with the sugar at high speed until double the volume. This step is important so that our sponge cake will be very spongy. I leave you a photo of how there should be.

Add the yogurth and the vegetable oil. Mix carefully with a silicone spatula.

Sift the flour and the baking powder and add to the batter. Incorporate it with wrapping movements.

Grease the baking pan with oil and then with flour. Pour the batter into the baking pan and bake about 15 minutes. Meanwhile, rinse the apricots and open there in half. Distribute the apricot halves on the cake and bake it for 15 minutes more or until toothpick inserted in the center comes out clean.

Place the tray on a cooling rack and leave it at room temperature until it has cooled completely.

At this time, sprinkle with cinnamon and icing sugar to taste.
