Chocolate, dates and nuts vegan truffles {raw food}

Today I come with a raw & vegan truffles recipe. There are easy and gluten free. What I like most about this recipe is that we only use natural, healthy and unprocessed ingredients. We will sweeten it with dates, which tastes good with nuts and chocolate.

I’m falling love for vegetarian and vegan cuisine. Their pilosophy is characterized by always prioritizing natural and vegetal ingredients. A cusine that gives us a multitude of vitamins and keeps us healthy and strong. But at the same time, helping us to be thin and have a clear mind.

The result is fleshy and tasty truffles, with an intense chocolate flavor. There are the perfect pleasure for when I leave the gym. A bite that fills me to energy without remorse.

As you will see below, its elaboration is easy. It’s just a matter to mixing all the ingredients with a powerful food processor and shaping the truffles.

I’m thinking about making this truffles again. But, the next time, I will to cover the truffles with another ingredients to give different flavors and colors. I’m thinking on grated coconut, pistachio powder, spirulina, matcha tea, lemon/orange dried peel, … what do you recommend me?

Ingredients for chocolate, dates and nuts vegan truffles:

  • 115 g of peeled walnuts
  • 200 g of boneless dates
  • 2 tablespoons of cocoa powder
  • A pinch of salt
  • 1 ½ tablespoons of carob flour
  • To cover: cocoa powder*

* This time I have covered the truffles with cocoa powder, but you can use shredded coconut, chopped pistachios or nuts, dehydrated fruit powder, matcha tea, …

How to make chocolate, dates and nuts vegan truffles:

First, place the nuts in a powerful food processor and turn into powder. Add the dates -without the bone- and crush until a puree.

Now, add the cocoa powder, a pinch of salt and the carob flour. Blend during a seconds, just enough to integrate all the ingredients.

Shape the truffles with your hands. Try to make all the bites on the same size.

The final touch: cover the truffles with cacao powder.

Let in the fridge for at least 1 hour to take consistency.

We already have the chocolate, dates and nuts truffles ready to eat. Remember to keep it on the fridge.
