These peanut butter and Lacasitos bars are perfect for snack time. Not only are delicious, but they give us energy. What I like most about these bars is that they are tender while crispy. (If you don’t have lacasitos, you can use m&ms).

These peanut butter bars will delight the little ones, but also the adults. There are ideal for the upcoming dates, since family reunions are just around the corner. Make a good cup of hot chocolate and serve it in front of the fireplace.

Ingredients for Peanut butter and Lacasitos cookie bars:

  • ½ cup (95 g) unsalted butter
  • 1 large egg
  • 1 cup (160 g) brown sugar
  • 1 tablespoon vanilla extract
  • ½ cup (65 g) creamy peanut butter
  • 1 cup (120 g) all-purpose flour
  • 160 g Lacasitos or m&ms

How to make Peanut butter and Lacasitos cookie bars:

First, preheat the oven to 350F and line a 8-by-8-inch baking pan with parchment paper.

Then, in a large bowl, add the melt butter, egg, brown sugar, vanilla, and whisk until smooth. Add the peanut butter and whisk until smooth.

Now, add the flour and stir until just combined, don’t overmix. Add the lacasitos or m&ms, saving a couple of them to decorate at the end.

Turn batter out into the pan, smoothing the top lightly with a spatula. Place a few lacasitos or m&ms on the top of the batter.

Bake for about 25 minutes, or until a toothpick inserted in the center should come out clean.

Let cool for at least 30 minutes before slicing and serving.

Bars will keep airtight at room temperature for up to 1 week.
