No one could resist the temptation with this carrot, coconut and ginger soup. To cook today’s recipe, we will only need a few ingredients and we will have it ready in about 30 minutes.
The result is a mild flavor soup but, at the same time, very aromatic. Perfect for those days when you want to eat well without spending hours in the kitchen.

Cold has come suddenly, without warning and to stay. On our home, autumn is synonymous with soups, and we love it! Soups are a great option for an easy, quick and comfort everyday dinner.
I love serving soups in bowls, so I can place a hand on each side and feel the heat. I can notice how the stress of the day goes away with each spoonful. Really?
What I like the most about soups is that there are satiating, healthy and provide us with lots of vitamins. For its elaboration our imagination can be infinite, because we can combine as many vegetables (and even fruits!) as we can think of.
Ingredients for carrot, coconut and ginger soup:
- 1 kg carrots
- 1 onion
- 2 potatoes
- 4 garlic cloves
- A piece of peeled ginger (about 1.5 cm)
- 1 can (400 ml) coconut milk
- 600 ml water
- Salt and pepper to taste
- A splash of olive oil
- Croutons and natural or coconut yogurt
How to make carrot, coconut and ginger soup:
First peel the onion, garlic and ginger and chop them. Sauté with olive oil until tender. Add water, coconut milk and bring it to a boil.
Then, peel the carrots and potatoes. Cut into pieces and add the pot. Add salt and pepper to taste.
Let cook for 15 minutes or until the potatoes and carrots are well cooked.
Remove from heat and blend it with a blender untill a smooth and without lumps soup. Taste and add more salt and pepper if its necessari.
Serve it with croutons and sugarfree yogurt.
